Begin by roughly chopping your vegetables. Don’t worry about making everything perfect; rustic chunks will add more texture to your final product. Combine the bell peppers, chili peppers, garlic, red onion, and carrots in a large mixing bowl. This vibrant mixture will boast a full spectrum of flavors!

Transfer your chopped vegetables into a cleaned mason jar. Pour in 4 cups of water and add 1-2 tablespoons of salt. The salt not only enhances flavor but also releases water from the vegetables, creating a brine. At this point I like to add slices of lime on the top to help avoid a harmless white yeast that tends to form. After the lime add a fermentation weight that is glass or a very clean rock to prevent the pieces from floating.


Step 3: Ferment Away!

Cover the jar with a fermentation lid or a coffee filter secured with a rubber band. This setup allows gases to escape during fermentation while keeping out contaminants. Place your jar on the counter away from direct sunlight and let it ferment for 2-3 weeks. During this period, good bacteria will thrive and transform your ingredients into a probiotic powerhouse!


Step 4: Blend to Perfection

After your fermentation period, you’ll notice a sour aroma and a bit of fizz—signs of successful fermentation! Now, it’s time to blend your mixture. If you want chunky salsa, go easy amigo. There are no rules.

Seal them tightly and store in the refrigerator. Your homemade salsa can last for months in your refridgerator but I tend to eat mine in a week or two because it's so versitale and popular. I keep a continual process of fermentation going. As soon as one jar is emptied, I start another.
